Hand up for not knowing COTIKA queso. I see that the town is near Jalisco, home of Jalisco cheese, famous for the listeria outbreak of 1985.
The refrain of the title song in Jimmy Buffett's album Barometer Soup goes "We'll BARREL ROLL into the sun, just for starters."
Most folks confuse "keg" and "BARREL." Those big ol' kegs that the strong bartenders wrestle with in bars and restaurants are actually 1/2 BARREL kegs. A full BARREL would be too big and cumbersome to manage in a retail environment.

I enjoyed today's puzzle! The theme was entertaining and well executed, with four entries that were all fresh and fun. The fill was also clean: a limited number of proper names and no dreck.
Of all things, I got stuck on the CHILI in frito pie. Here in New Mexico, we usually spell it with an "E" on the end instead of the more common "I". Of course, I have seen it with the "I" many times before but my brain just didn't go there this morning. Eventually the perps got me on the right track.
Thank-you for Doug for the pleasant romp, and to Hahtoolah for the lively review. The cat scan cartoon was my favorite.

Steve NASH was a Phoenix Sun for a few years back in the days when I was an avid fan. OSKAR Schindler will be forever etched in my memory from watching the movie, "Schindler's List". What a hero!

I kind of GOOFED in the east. I don’t know why I couldn’t come up with this expression, I missed the CHILI, and the iPods, and of course I didn’t know COTIJA. What a silly mess.
I did enjoy the BEER theme and detected it pretty quickly. I had a few unknowns like CHEF as clued, KUNIS, and KARMA as clued, but perps took care of them in no time.
This CW was not a BORE.

I thought this was a near-perfect puzzle from start to finish. There were a few that I failed to connect with at first, but it took only a letter or two for the light bulb to come on.
COJITA was a gimme for this Mexican food-loving lifelong Californian.
I’ve come to accept UTES, as clued, as a crossword staple, although having been part of the 4WD community and owning many trucks through the years, I have yet to hear that term with my own ears. We just call them trucks.

Late posting due to the usual reason: getting sidetracked. Anyway, I enjoyed the theme, the reveal, the fill, and the solve! No unknowns, except for Cotija, and no w/os. DP is a seasoned pro and his puzzles never fail to entertain and delight the solver, IMO.

Re: barrel roll
Most people mistake this with spinning your plane by just moving the stick left, (or right.) this is not a barrel roll, this is an aileron roll...
A barrel roll involves moving your plane in 3 dimensions while rolling, which would look like a coiled spring if viewed from outside. This is what is needed if you want to spin your plane while holding a glass of beer in your hand without spilling. The centrifical (centripetal maybe) force holds the liquid in the container like water in a bucket spun on a string.

Knowing how to do this is especially important when you are on those long missions, and the beer cans pile up. You need to know how to take evasive action at a moments notice, without spilling your beer, or getting hit in the head with empty bottles. It is even more important when you are on even longer reconnaissance missions, and you have to use a piss bucket...
P.s. none of this works if you are flying on your computer flight simulator,
