Not so fast! There is another place where OIL and WATER mix: inside our bodies' cells! Oils (aka lipids), water, and other substances such as proteins, sugars, and ions mix as a part of the exquisitely controlled metabolism of biological cells (e.g. 62A OVA). Their entrance into, and exit from, cells is carefully regulated by the cell membrane, consisting primarily of a lipid bilayer. As the term implies, each layer has two parts consisting of a lipophylic end ("fat loving") and a hydrophilic end ("water loving").
